Lilac Pisco Collins

If you follow me on Instagram, you know that I am a big fan of pink drinks. I seriously can't get enough of them lately. This little cocktail was the result of my love of pink drinks and needing something refreshing and easy to sip when it got really hot a few weeks ago.

If you've been following along with the blog, you'll know that I made some Lilac Syrup a while back (I may or may not have made a little too much of it) and I'm needing to use it up before it goes bad. So, I've been trying to put it in more and more drinks lately.

I decided a good combo would be a Collins style drink, but with Pisco instead of the typical Gin. Pisco Capurro has some beautiful floral notes to it, which marries itself nicely to a drink with Lilac in it as well. It turned out refreshing and so pretty. Did I mention I'm a total sucker for pink drinks??

  • 3/4 oz Lilac Syrup

Pour all ingredients except soda into a Collins glass filled with ice. Stir briefly and add soda to top. Garnish with a lemon wheel and a pretty pink flower. Add a straw and enjoy!
